Slow cooker recipes that aren't soup

Does anyone have good slow cooker recipes they can recommend that aren't soup? Preferably ones that are entire meals - proteins (meat ok but not required), veggies, and carbs. Not "make the meat in the slow cooker but then also spend 30 minutes cooking everything else once that's done". I work at home during the day, so I can do "dump and forget" meals, but once I get the kids, I'm often not back to start cooking till 5 or 6, and their bedtime starts at 7:30. We have limited tolerance for soups (oh what an extravagant life we lead that we can be picky like that), so my main thing holding me back is that I only really know slow cooker soup recipes. I found maybe two that looked good through google that aren't soup, but could use more ideas than that.

Look at the “Cook It and Forget It” cookbooks - they are very comprehensive (and should be at your library.)

I am endlessly delighted by soup, but you can do lots of chicken things. Pulled pork. Chicken for tacos. Macaroni and cheese. Chili. I do pinto beans for retried beans.

Someone recently gave me an Indian cookbook for slow cooker recipes, and I've been working through some of them. So far, the aloo mattar (potatoes and peas), chicken curry, and gobi sabzi (cauliflower) have been hits. Making a squash dish today. Haven't tried the chana masala (chickpeas) yet, but it's on the list. If any of those sound good to you, I can copy out the recipes.

If you're more into Mexican food, I make chicken tinga in the slow cooker. Great with tortillas or on salad.

Chili is also always a good option, but I don't have a recipe, I just wing it.

Italian chicken

3-4 boneless skinless chicken breasts
2 cans cream of chicken soup
1 pkg dry Italian Dressing mix

Cook on low for 5-6 hours or on high for 3-4 hours
30 minutes before serving, add 8 oz cream cheese and let it melt

Mix and lightly shred the chicken. 

Serve over rice.

I love the simplicity of this.

I wonder if there's any way to make the rice in the same pot. Throw in frozen peas at the end, boom, full meal.

This doesn't really fit your requirements, but we *love* these roast beef sandwiches.

beef roast,
butter (note)
Italian dressing seasoning packets
brown gravy mix
pepperoncini peppers, and some of their juice
garlic salt
beef broth
onions

You cook all that in the crockpot.  When it's done, you shred the meat, while toasting buns with cheese slices on them.  Best sandwiches ever, and you can dip them in the broth.

A note on the butter, the recipe calls for a lot.  Once we're done cooking, I usually remove the layer of oils at the top of the mixture.  If we have leftovers, i remove the solidified butter layer before warming them up.  So we've made a mental note not to use it next time.

This Tex-Mex slow cooker dinner is a hit in our home:

4-5 chicken breasts or similar amount of thighs (can be frozen)
1-2 cups frozen corn
1 can black beans
2-3 cups jarred salsa

Cook on low all day or high 4-5 hours. Dice up or shred chicken when its cooked through. Serve as is or add 1 package diced cream cheese for a creamy dinner. Serve over rice, pasta or in tortillas.

Teriyaki Chicken

3-4 frozen chicken breasts with ribs attached, meat side against the crockpot walls.
1 16-oz can of pineapple chunks
1C teriyaki sauce

Get pre-cooked packets of rice from Costco - 90 seconds in the microwave.

Cook the chicken on low all day; cook rice and serve.

I just made white chicken chili yesterday on the stovetop.  Yum!
